Energy Bites

No Bake Peanut Butter Energy Bites. Loaded with old fashioned oats, peanut butter, flax seeds, dates and other healthy ingredients perfect for a protein packed breakfast or snack! Actually, I eat them any time of the day because they are so addicting. Get creative with these!

Energy Bites


Ingredients

  • Dry Oatmeal- I used Old Fashioned oats

  • Dates-Pits Removed

  • Unsweetened Coconut Flakes

  • Peanut Butter or Almond Butter

  • Ground Flax Seed

  • Honey or Agave Nectar

  • Chia Seeds

  • Vanilla Extract

  • Dark Chocolate Chips

  • Espresso powder

Instructions

  1. Fill a glass container with very hot water. (I heat about 2 cups in the microwave for about 1 1/2 minutes.)

  2. Add dates to water, cover with plastic wrap and set aside for 5-10 minutes. This softens the dates and makes them easier to puree, but may not be necessary if dates are very soft.

  3. Remove dates from water and place in a food processor.Add to the food processor about 1 Tablespoon of the water the dates soaked in.

  4. Pulse until smooth, scraping down sides as necessary. Add additional water to thin the consistency of the paste, if desired.

  5. Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for an hour.

  6. Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.

Notes:

These are very customizable. Sometimes I add dried cranberries, protein powder, Matcha Powder,etc.
