Mascarpone Stuffed French Toast

I think French Toast may just be one of my favorite breakfast/brunch foods. I mean what’s not to love? It’s soft, sweet, fluffy, buttery, eggy and well… completely delicious. 

Okay I have to admit that I prefer French toast over pancakes and waffles. Whenever bread is involved, it always wins and this Mascarpone Stuffed French toast in particular is by far my favorite one.

I really do not even know how to convey my love for this light and fluffy, perfectly sweet, cream cheese stuffed french toast. It’s just that amazing, so good I’ve made it more times than I can count.

Here are the step by step instructions

This recipe is simple. You’ll need to start out with a really good bread. I used brioche but you can use challah or milk bread.  once you have your bread the next most crucial item is the Mascarpone but you can use cream cheese if you like that sort of thing..jk but seriously try the mascarpone if you have access to It! You’re going to whip the mascarpone with honey before adding it to the toast.

Next, stuff the honeyed mascarpone inside the thick cut slices of brioche and dip the bread into an eggy mixture. I used ripple milk, vanilla, eggs, cinnamon and nutmeg. Then just fry the toast in a skillet with lots of butter, ghee or coconut oil. I like my French toast almost burnt but please do not go overboard with cooking the French toast, use your eye and Your senses! 

Now the fun part—toppings! I like to use fresh strawberries, blueberries or raspberries, but use whatever fruit or nut topping you like (any fruit goes well with French toast) if you want to take a page from my book and be extra, you can make an apple topping by slicing half an apple,toss the slices with brown sugar, vanilla and cinnamon then cook them in butter until slightly tender.

For a bit of extra sweetness I did a little drizzle of honey—I prefer honey over maple syrup. You can go the extra extra mile and add powdered sugar but the way my body is set up, it’ll never forgive me 🤣

Mascarpone Stuffed French Toast


Ingredients:

  • 1 brioche bread, sliced into 1 inch thick pieces

  • 1 1/2 cups milk of choice

  • 2 1/2 tablespoons dark rum

  • 4 large eggs

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 3 tbsp vanilla extract

  • 1/4 cup sugar

  • 8 oz Mascarpone

  • 3-4 tbsp honey

  • Strawberries, for serving

  • maple syrup or honey, for serving

Instructions:

  1. To make the whipped mascarpone, add the mascarpone to a bowl and using a whisk or a fork, beat it until soft.

  2. Beat in the honey and 1 1/2 tbsp vanilla until just combined.

  3. Slice the bread in 1 inch slices and smear the mascarpone on, as if making a sandwich. Pinch the edges together so the mixture doesn’t come out while cooking it.

  4. In a shallow, medium size bowl, whisk together the eggs, milk, vanilla, cinnamon, nutmeg, rum( if using) and salt until combined. Dip the stuffed bread into the egg mixture, allowing each side to sit for 1-2 minutes in the egg mixture.

  5. When ready to cook the French toast. Heat a large skillet or griddle over medium heat and coat generously with ghee, butter or coconut oil. When the skillet is hot, cook the French toast in batches (do not overcrowd) until golden and crisp, 3 to 4 minutes per side. Remove and serve immediately.

  6. Serve it with your favorite toppings and Enjoy!
