Grilled Veggie Skewers with Greek Yogurt Herb Sauce

Summer Veggie Skewers with Greek Yogurt Herb Sauce
Ingredients
For the Skewers
onion
Zucchini
yellow squash
Bell pepper- yellow, green
Olive oil
S&P
Garlic Herb Sauce
olive oil
Greek Yogurt
lime
cloves garlic - minced
fresh parsley - minced
fresh cilantro - minced
fresh rosemary - minced
salt - to taste
Black pepper- to taste
Instructions
Skewers:
Soak wooden skewers in water for at least 15-30 minutes*. The number of skewers will depend on the size of each vegetable how big the slices are.
Peel the onion, then slice it into big enough pieces that will fit the skewer. Seed and chop each bell pepper into approximately 1-inch by 1-inch pieces. Finally, chop the zucchini and squash into rounds.
Season the vegetables with salt and pepper then Skewer the vegetables by alternating between the onion, squash & zucchini, and the peppers . Brush skewers with olive oil
Preheat grill to medium-high heat. Once the grill is hot, add skewers and grill for around 8 min minutes per side, or until vegetables are just softening and browning around the edges. Remove from heat and enjoy with the Greek Yogurt Herb Sauce.
Greek Yogurt Herb Sauce:
in a food processor, add all the ingredients and blend until smooth.
*Notes
You can skip the soak if you’re pressed for time, but I recommend doing it.
