Vegan Dark Chocolate Brownies

Vegan Dark Chocolate Brownies


Ingredients:

  • 1 cup dark chocolate,chopped - I used Theo’s 85% Dark chocolate

  • 3/4 cup all-purpose flour 

  • 3/4 cup cocoa powder

  • 2 tsp espresso powder

  • 1/2 tsp sea salt

  • 1/4 tsp baking soda

  • 6 tbsp Aquafaba or 2 whole fresh eggs

  • 3/4  cup brown sugar

  • 3/4 cup cane sugar

  • 1 cup melted coconut oil 

  • 2 tbsp water 

  • 3 tsp pure vanilla extract

  • 1 cup dark chocolate chips unmelted (optional but recommended)

Instructions:

  1. Preheat the oven to 350°F. Line an 8x8-inch baking pan with parchment paper, leaving an overhang on two sides.

  2. In a mixing bowl, add the flour, cocoa powder,espresso, salt, and baking soda and mix until just combined.

  3. In a large microwavable bowl combine the chocolate and coconut oil and microwave in 30 second bursts until melted and smooth. Alternatively, you can make a double broiler by simmering a small amount of water to a small pot and place a heatproof bowl over the pot (making sure the bowl doesn’t touch the water) and place the chocolate chips and coconut oil in the bowl over the pot and stir until melted.

  4. Let cool slightly before adding in the granulated sugar, brown sugar, aquafaba or eggs and vanilla.

  5. Add the dry mixture to the wet mixture and melted chocolate chips and stir until combined. then mix in the 2 tbsp of water.

  6. Pour the batter into the prepared baking pan and bake for about 35 minutes or until the brownies are set but moist crumbs are still attached when inserting a toothpick. Let cool completely before cutting into squares and serving.

  7. Enjoy!
