Mushroom and Goat Cheese Pizza

Mushroom and Goat Cheese Pizza on a wooden pizza peel, the puffy charred artisan crust topped with creamy goat cheese

Ingredients

  • 2 packs of mushrooms, I used Chanterelle and Crimini, sliced
  • S + P to taste
  • Red pepper flakes
  • 3-4 sprigs Fresh Thyme
  • 1 sprig Fresh Rosemary, chopped
  • Balsamic Vinegar, I used around 4 tbsp
  • Olive Oil
  • 1 pizza dough, I used this recipe but please use whatever pizza dough you prefer.
  • Fresh mozzarella
  • Goat cheese of your choice, I used CHEVOO smoked sea salt and rosemary
  • Creme fraiche, I used about 5 tbsp.
  • Fresh basil, as much or as little as you’d like.

Instructions

  1. Preheat the oven to 500 degrees F. Grease a large baking sheet with olive oil.
  2. Heat olive oil on a pan on medium-high. Add the red pepper flakes and cook for 2 minutes then add the mushrooms along with the sprigs of thyme (leave them whole) and the chopped rosemary. Season with salt and pepper.
  3. Cook the mushrooms until they are golden brown, about 8 minutes.— Add the balsamic and continue cooking for another 5 min or until the mushrooms have absorbed the balsamic vinegar. Remove the thyme sprigs and let the mix come to room temperature.
  4. Roll out the dough until it’s to your preferred size and place it on the baking sheet.
  5. Drizzle the top of the dough a little bit of olive oil and place the goat cheese around the pizza— spoon the crème fraiche around the pizza as well (check my IG Highlight “pizza” for reference). Add the mushroom mixture along with fresh basil leaves and break the fresh mozzarella over the mushrooms.
  6. Transfer to the oven and bake for 12-15 minutes or until the crust is golden and the cheese has melted.
  7. Top the pizza with pepper, red pepper flakes and more chopped herbs, if desired.
  8. Enjoy!
