Caramelized Onion and Mushroom Pizza

Ingredients

  • 1 Sweet Onion, sliced
  • 4 cloves garlic. Chopped
  • 1 pack of Mushrooms, sliced
  • Fresh Kale
  • S + P to taste
  • 3-4 sprigs Fresh Thyme, chopped
  • 4-5 leaves of Fresh Sage, chopped
  • 1 sprig Fresh Rosemary, chopped
  • White dry Wine, around 1/2 cup
  • Balsamic Vinegar, I used around 4 tbsp
  • 3 tbsp butter
  • Olive Oil
  • 1 pizza dough, I used this recipe but please use whatever pizza dough you prefer.
  • Gruyere cheese, grated
  • Pecorino Romano, grated

Instructions

  1. Preheat the oven to 450 degrees F. Grease a large baking sheet with olive oil.
  2. Melt the butter in a large skillet over medium heat. Add the onions and cook for about 5 minutes, until they’re soft. Add half of the wine and season with S + P. Continue cooking for another 6 min or so then add the rest of the wine, the herbs, the mushrooms, garlic and balsamic vinegar. Cook until the onions are golden and caramelized. Put aside and let it cool.
  3. Roll the dough until it’s thin and place it on the baking sheet
  4. Drizzle the top of the dough with olive oil. Add the Kale and Gruyere, then layer onion/mushroom mixture over the cheese. Top with more gruyere and romano.
  5. Transfer to the oven and bake for 15 minutes or until the crust is golden and the cheese has melted.
  6. Top the pizza with pepper, red pepper flaked and more chopped herbs if desired.
