Chicken Alla Vodka Pizza

Ingredients

  • Vodka sauce
  • Chicken breast
  • Red bell pepper, sliced toy our liking
  • Red pepper flakes
  • Kale, chopped
  • Pecorino romano
  • Fresh mozzarella
  • Fresh rosemary, chopped
  • Fresh thyme, chopped
  • Olive oil
  • 1 head of garlic
  • Olive Oil
  • Parmigiano Reggiano
  • 1 pizza dough, I used this recipe but please use whatever pizza dough you prefer.
  • Fresh thyme, bazil or rosemary for serving

Instructions

  1. Make the Vodka sauce.
  2. When ready to bake, Preheat the oven to 400 degrees F. Grease a baking sheet with olive oil.
  3. Slice the bell pepper and slice the top of the garlic but making sure it stays intact. Drizzle both the garlic and pepper with olive oil and wrap the garlic in foil. Transfer to the oven and bake until the peppers have some char to them and the garlic is roasted, may take around 20 min. Remove from the oven when they’re done and take out all the cloves garlic (you can use a butter knife to take them out).
  4. While the vegetables are roasting, make the chicken by seasoning the chicken breast with salt, pepper and red pepper flakes. Sear on both sides until it’s golden, but do not cook it all the way—you’re going to finish cooking the chicken in the oven while the pizza bakes so avoid cooking the chicken all the way through in this step. Slice the chicken breast to your liking and place it to the side.
  5. Preheat the oven to 500 Roll out the dough until it’s to your preferred size and place it on the baking sheet.
  6. Drizzle the top of the dough with some olive oil, spoon the vodka sauce on top then add the kale, chicken, roasted garlic, roasted pepper fresh mozzarella, pecorino romano and parmigiano reggiano.
  7. Transfer to the oven and bake for 15 minutes or until the crust is golden and the cheese has melted.
  8. Top the pizza with pepper, red pepper flakes and more chopped herbs, if desired.
