Lingonberry Waffles

Ingredients

  • 2 1/4 Cups All Purpose Flour
  • 2 Cups Milk- I use Almond
  • 1/4 cup Mascarpone
  • 1/3 cup- lingonberry Jam
  • 1 Tablespoon Baking Powder
  • 3 Tablespoons Sugar
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Cinnamon
  • 2 Large Eggs- room temperature- Separated
  • 1/2 Cup Coconut Oil
  • 1 Teaspoon Vanilla Extract

Instructions

  1. Creme Fraiche
  2. Honey
  3. Mixed Berries
  4. Lingonberry Jam
  5. Preheat your waffle iron, spray with non stick cooking spray (I use Coconut) and set aside.
  6. In a large bowl whisk together the flour, baking powder, sugar, salt, and cinnamon.
  7. In a medium bowl beat the egg whites with a hand mixer until stiff peaks form. Set aside.
  8. In a separate bowl mix together the egg yolks, oil, mascarpone, milk and vanilla extract.
  9. Add the egg yolk mixture to the dry ingredients and mix well.
  10. Fold in the Lingonberry Jam then fold in the egg whites.
  11. Pour the batter onto your hot waffle iron and cook according to manufacturer's directions.
  12. Serve immediately with Creme Fraiche, Lingonberry Jam, Fresh berries and honey.
  13. Enjoy!
  14. If you can’t find Lingonberry Jam, you can use any jam you’d like The taste is similar to cranberries but are not quite as tart.
