Citrus and Mojo Marinated Grilled Chicken Skewers

Five Citrus and Mojo Marinated Grilled Chicken Skewers fanned across a rustic white ceramic plate

Ingredients

  • Chicken Breast, cut into bite size chunks
  • 1/4 cup mojo marinade
  • 4-5 garlic cloves
  • 2-3 tbsp adobo seasoning
  • 1/2 cup Naranja Agria marinade (sub 1 orange, 1 lemon and 2 limes)
  • 1 whole bunch parsley, chopped
  • S + P
  • 2-3 tbsp smoked paprika
  • Olive oil
  • Skewer sticks (soaked in water for at least 30 minutes)
  • 1 onion, cut into pieces (to add to the end of the skewers)
  • One lemon, juice and zest
  • Handful Fresh Parsley, chopped
  • 2-3 sprigs of fresh thyme, chopped
  • 1-2 tbsp apple cider vinegar
  • 1/4 cup olive oil
  • S + P
  • Red pepper flakes

Instructions

  1. In a gallon size zip lock bag, combine the chicken, olive oil, paprika, parsley, garlic, mojo. Naranja Agria, Adobo, and S + P. Marinate for 1 hour in the fridge or at room temperature for 30 min.
  2. Set your grill, grill pan or skillet to medium-high heat. Take skewers and thread the chicken pieces on. Add the pieces of onion to the ends of the skewers. Once they’re on the skewers, place them on a sheet pan and make sure you brush all of the marinade on the chicken.
  3. Brush the chicken on the skewers lightly with olive oil. Grill the skewers until lightly charred and cooked through, turning them occasionally throughout cooking, about 20 min.
  4. To make the vinaigrette, combine the lemon juice, lemon zest, olive oil, thyme, vinegar, parsley, S + P and crushed red pepper flakes in a bowl. Mix and adjust the seasoning to your liking.
  5. Serve the skewers drizzled with vinaigrette and roasted veggies of your choice!
