Sheet Pan Harissa Chicken with Sweet Potatoes and Chickpeas

Ingredients

  • extra virgin olive oil
  • Chicken; I used breasts but you can use whatever you like or none at all
  • garlic cloves
  • S&P
  • smoked paprika
  • lemon; juice and zest and slices. I used 2 whole lemons
  • harissa seasoning; I bought mine from Trader Joe’s
  • honey
  • Sweet Potatoes
  • Canned chickpeas
  • Halloumi cheese
  • basil

Instructions

  1. Preheat the oven to 425 degrees F.
  2. In a bowl, mix the olive oil, honey, harissa, lemon juice and zest, S&P and smoked paprika. Put the chicken in a zip lock bag and add some of the seasoning (enough to coat it thoroughly)
  3. On a baking sheet, add the sweet potatoes, the garlic cloves and the chickpeas. Toss well with the rest of the seasoning and make sure that they’re even coated. Add the chicken to the sheet pan and arrange everything in an even layer. Sprinkle with some more olive oil and pepper. Add the lemon slices and then transfer to the oven. Roast for 40-45 minutes, tossing halfway through cooking until the chicken is cooked through and the potatoes are golden.
  4. To serve, top the chicken with the halloumi and basil (or cilantro). Enjoy!
